Buttermilk Biscuit Panzanella Salad

Entree

This panzanella salad is Tuscany with a southern flare. This versatile salad can use any number of ingredients so long as biscuits are included!

Ingredients

  • 4 Mary B’s® Buttermilk Biscuits, cooked according to package
  • 1 English Cucumber, diced
  • 2 Peaches, diced large
  • ½ Red Onion, finely chopped
  • 2 Bunches of Basil, roughly chopped
  • 1 Pkg of Feta Cheese
  • Lime Juice
  • Olive Oil
  • Salt and Pepper

Directions

1. Cut prepared biscuits into 6 pieces each.
2. Combine cucumber, peaches, red onion, basil, and feta in a bowl.
3. Add biscuit pieces.
4. Salt and pepper to taste.
5. Dress with olive oil and lime juice. Toss until ingredients are thoroughly combined. Serve.
